Butterscotch Cream Cheese Bars Recipe
- 1 pkt 12 ounce Butterscotch Chips
- 6 Tbsp. Butter
- 2 c. Graham cracker crumbs
- 1 c. Finely minced walnuts
- 2 pkt 8 ounce each cream cheese, soft
- 1/2 c. Sugar
- 4 x Large eggs
- 1/4 c. Flour
- 2 Tbsp. Lemon juice

- In a small heavy saucepan over low heat (or possibly in a microwave oven in a microwave safe bowl or possibly saucepan for 4 min on 70% power), heat the butterscotch chips and butter, stirring till smooth.
- If you use a microwave safe saucepan or possibly bowl, be sure to cover it.

- Transfer to large bowl.
- With a fork, stir in the graham cracker crumbs and walnuts till the mix resembles crumbs; reserve 2 c. for the topping.
- Press remaining mix into a 13 x 9 x 3 baking pan and bake in preheated 350F oven for 12 min.

- In a large mixing bowl, beat cream cheese and sugar till fluffy.
- Slowly add in one egg at a time, beating after each addition.
- Add in flour and lemon juice, and beat till smooth.
- 4.
- Pour over warm baked crust, and sprinkle with reserved crumbs.
- Bake at 350F for 25 min.
- Cold completely in pan on wire rack.
- Cut into 2 x 1 inch bars.
- Refrigeratebefore serving.
