Asian Green Vegetable Casserole Recipe
- 1 sm Green bell pepper, stemmed, seeded, deribbed and cut into 2-inch strips
- 6 x Scallions, trimmed, whites cut into 3-inch lengths and greens cut into 1/4-inch rounds
- 1/4 lb Zucchini, trimmed, cut in half lengthwise, then cut into 2-inch pcs
- 1/4 lb Snow peas, strung
- 1/4 c. Fresh coriander leaves
- 2 Tbsp. Tamari soy
- 1 1/2 Tbsp. Rice wine vinegar
- 6 x Thin slices fresh ginger, peeled
- 2 tsp Vegetable oil
- Toss together al ingredients in a 1 qt casserole.
- Cover tightly with microwave plastic wrap.
- Cook at 100 percent for 6 min.
- Remove from oven.
- Uncover and stir well once or possibly twice before serving.
