Blueberry and Apple Muffins
- 1 cup reduced fat milk
- 2 eggs, lightly beaten
- 1/4 cup unsweetened apple juice
- Finely grated rind of 1 orange Safeway 1 lb For $1.28 thru 02/09
- 2 cups SR flour
- 1/2 cup wholemeal SR flour
- 1/3 cup caster sugar
- 1 Granny Smith apple, grated
- 1/2 cup blueberries King Sooper's 1 pkg For $2.99 thru 02/09
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- Whisk together the milk, eggs, juice and rind.
- Combine dry ingredients and fruit in a large bowl.
- Make a well in the centre.
- Add milk mixture and mix until just combined.
- Spoon into 12 lightly oiled 1/2 cup capacity muffin pans and bake at 200 degrees C for 15-20 minutes until cooked.
- When cool, halve and spread with Philly*.
