Blueberry and Apple Muffins

  1. Whisk together the milk, eggs, juice and rind.
  2. Combine dry ingredients and fruit in a large bowl.
  3. Make a well in the centre.
  4. Add milk mixture and mix until just combined.
  5. Spoon into 12 lightly oiled 1/2 cup capacity muffin pans and bake at 200 degrees C for 15-20 minutes until cooked.
  6. When cool, halve and spread with Philly*.
