Pasta with Spicy Sausage Ragu
- 1 Tablespoon Olive Oil
- 1 whole Onion, Chopped Finely
- 2 whole Carrots, Chopped Finely
- 2 sticks Celery Chopped Finely
- 6 whole Sausages
- 1/2 teaspoons Hot Chili Powder
- 1/2 teaspoons Smoked Paprika
- 1/2 cups Red Wine
- 1- 1/2 pounds, 3/4 ounces, weight Passata
- 1/2 pounds, 2-58 ounces, weight Pasta
- Parmesan Cheese, For Garnish (optional)

- In a large pan, heat the oil over a medium heat.
- Add the onion, carrot and celery and cook until soft and translucent.
- 2.
- Remove the sausages from their casing and add to the pan with the chilli and paprika.
- Cook until brown.
- 3.
- Turn the heat up and throw in the red wine.
- When the alcohol has burned off, add the passata.
- Turn down the heat and simmer for at least 30 minutes.
- 4.
- Serve with pasta and garnish with parmesan if desired.
