Crispy Tempura Oysters With Garlic Orange Spiced Teriyaki Remoul

  1. Shuck the oysters & reserve the juice (liquor).
  2. In a sauce pan over medium heat place olive oil and smashed garlic.
  3. Cook garlic till browned then remove
  4. Add orange juice along with pickle juice and reduce by 2/3 or till slightly syrupy
  5. Let cool at room temp for 1/2 hour.
  6. Whisk reduction into mayonnaise with oyster liquor blending well till smooth and creamy.
  7. Heat canola oil to 350 degrees.
  8. Dust oysters with tempura flour and fry till golden brown (2 minutes).
  9. Serve crispy oysters with dipping sauce.
