Simply Grilled Wild Sockeye Salmon

  1. Brush grill rack with oil.
  2. Drizzle olive oil onto skin-side and top of salmon; sprinkle generously with salt and fresh cracked pepper.
  3. Place salmon on preheated grill, skin-side down.
  4. Grill salmon uncovered 5 minutes.
  5. Using 1 or 2 large spatulas, carefully turn fish over.
  6. Grill until fish just begins to flake in the center, 4 to 5 minutes longer.
  7. Transfer salmon to a platter and serve immediately.
  8. (If you are using a wood-burning or charcoal grill, leave uncovered.
  9. Only cover if using a gas grill.)
