Flavor-full Bruschetta
- 5 whole Tomatoes
- 4 cloves Garlic
- 1/4 cups Onion
- 2 Tablespoons Capers, Rinsed
- 1/4 cups Grated Parmesan Cheese
- 1 bunch Basil Finely Chopped
- 2 Tablespoons Balsalmic Vinegar
- 1 Tablespoon Extra Virgin Olive Oil
- Salt And Pepper, to taste
- 1 loaf Crusty Bread
- Wash and chop tomatoes.
- I like the vine-ripened ones.
- I chop them pretty small.
- Add the garlic, which I prefer minced, but you may use a press.
- Also if you dont mind adding a step, throw the chopped garlic into a hot pan with a bit of olive oil for a minute.
- Remember the more finely chopped garlic is, the stronger the flavor.
- I use white onion, but not neccessary, again very finely chopped, because I like onion in very small quantities.
- Capers youll find jarred and are super yummy.
- Trust me.
- Combine all of the chopped veggies, capers and everything else in a large bowl, finishing with the balsalmic and olive oil you may add more to your liking.
- I then let it sit covered in the fridge to let the flavors combine before adding salt and pepper to taste.
- Serve over crusty slices of bread that you put salt and olive oil on then broil in the oven til toasty.
- You wont regret it.
