Cherry Tomatoes with Fresh Herbs

  1. Blanch tomatoes in medium pot of boiling water 30 seconds.
  2. Drain.
  3. Rinse under cold water.
  4. Drain.
  5. Peel tomatoes.
  6. (Can be made 4 hours ahead.
  7. Cover and chill).
  8. Heat oil in heavy large skillet over high heat.
  9. Add herbs and tomatoes and stir until tomatoes are coated with herbs, about 1 minute.
  10. Remove from heat.
  11. Season to taste with salt and pepper.
  12. Transfer to bowl and serve.
