Garden Bagel
- 1 bagel
- 2 tsp. olive oil
- 3 heaping Tbs. hummus or baba ghanoush
- 1/4 cup chopped lettuce
- 1 Tbs. diced tomato
- 1 Tbs. diced avocado
- 1 Tbs. diced red onion
- 1 Tbs. chopped black olives or pitted kalamata olives
- 1/2 tsp. capers
- 1 Tbs. salad dressing
- 1 tsp. grated Parmesan cheese, optional
- Slice a thin portion off the top of a bagel.
- Using your fingers, scoop out some of the insides to make a shell.
- Heat olive oil in a small skillet over medium heat, and saut8E bagel bits scooped from bagel.
- When browned, remove from heat, and set aside.
- Spread hummus or baba ghanoush equally in both bagel shells, and set aside.
- Mix lettuce, tomato, avocado, red onion, olives and capers together with salad dressing.
- Spoon mixture into bagel shell.
- Sprinkle with Parmesan cheese, if using, and top with browned bagel bits.
