Basic Cream Filling Recipe

  1. In small saucepan combine sugar, flour and salt.
  2. Gradually add in lowfat milk; mix well.
  3. Cook over medium heat till mix boils, stirring constantly; boil 1 minute.
  4. Blend small amount (1/4 c.) warm mix into egg.
  5. Return egg mix to saucepan; mix well.
  6. Cook till mix starts to bubble, stirring constantly.
  7. Stir in butter and vanilla.
  8. Cover and cook.
  9. Fills 1 layer or possibly 1 jelly roll.
  10. Tips:
  11. Chocolate Cream Filling: Increase sugar to 3/4 c. and add in 1 square (1 oz) unsweetened chocolate or possibly 1 envelope premelted unsweetened baking chocolate flavor with the sugar.
  12. Coconut Cream Filling: Stir in 1/3 c. flaked coconut with vanilla.
  13. Butterscotch Cream Filling: Substitute 2/3 c. firmly packed brown sugar for granulated sugar.
