Basic Cream Filling Recipe
- 1/2 c. sugar
- 3 tbsp. flour
- 1/4 teaspoon salt
- 1 1/4 c. lowfat milk
- 2 egg yolks or possibly 1 egg, slightly beaten
- 1 tbsp. butter
- 1 teaspoon vanilla
- In small saucepan combine sugar, flour and salt.
- Gradually add in lowfat milk; mix well.
- Cook over medium heat till mix boils, stirring constantly; boil 1 minute.
- Blend small amount (1/4 c.) warm mix into egg.
- Return egg mix to saucepan; mix well.
- Cook till mix starts to bubble, stirring constantly.
- Stir in butter and vanilla.
- Cover and cook.
- Fills 1 layer or possibly 1 jelly roll.
- Tips:
- Chocolate Cream Filling: Increase sugar to 3/4 c. and add in 1 square (1 oz) unsweetened chocolate or possibly 1 envelope premelted unsweetened baking chocolate flavor with the sugar.
- Coconut Cream Filling: Stir in 1/3 c. flaked coconut with vanilla.
- Butterscotch Cream Filling: Substitute 2/3 c. firmly packed brown sugar for granulated sugar.
