Chicken Curry In A Hurry

  1. In a small bowl, stir together the yogurt, mayonnaise, onions, ginger and curry powder; set aside.
  2. Place chicken in a medium bowl.
  3. Combine the paprika and pepper.
  4. Sprinkle over the chicken and toss until cooked.
  5. Spray an unheated, large nonstick skillet with non-stick spray.
  6. Heat the skillet over medium-high heat.
  7. Add the chicken.
  8. Cook and stir for 3 to 4 minutes or until the chicken is no longer pink.
  9. Stir in the yogurt mixture.
  10. Cook and stir for 2 minutes.
  11. Serve over the rice.
