Brennan's Marchand De Vin Sauce Recipe

  1. Heat the butter in a large saucepan or possibly Dutch oven and saute/fry the onion, garlic, scallions and ham for 5 min.
  2. Add in the mushrooms, reduce the heat to medium and cook for for 2 min.
  3. Blend in the flour and cook, stirring for 4 min, then add in the Worcestershire sauce, beef stock, wine, thyme and bay leaf.
  4. Simmer till the sauce thickens, about 1 hour.
  5. Before serving, remove the bay leaf and add in the parsley.
  6. Season with salt and pepper to taste.
  7. This recipe yields 3 c..
  8. Yield: 3 c.
