Brennan's Marchand De Vin Sauce Recipe
- 6 Tbsp. butter
- 1/2 c. finely-minced onion
- 1 1/2 tsp finely-minced garlic
- 1/2 c. finely-minced scallions
- 1/2 c. finely-minced boiled ham
- 1/2 c. finely-minced mushrooms
- 1/3 c. all-purpose flour
- 2 Tbsp. Worcestershire sauce
- 2 c. beef stock
- 1/2 c. red wine
- 1 1/2 tsp thyme leaves
- 1 x bay leaf
- 1/2 c. finely-minced fresh parsley salt to taste Freshly-grnd black pepper to taste
- Heat the butter in a large saucepan or possibly Dutch oven and saute/fry the onion, garlic, scallions and ham for 5 min.
- Add in the mushrooms, reduce the heat to medium and cook for for 2 min.
- Blend in the flour and cook, stirring for 4 min, then add in the Worcestershire sauce, beef stock, wine, thyme and bay leaf.
- Simmer till the sauce thickens, about 1 hour.
- Before serving, remove the bay leaf and add in the parsley.
- Season with salt and pepper to taste.
- This recipe yields 3 c..
