Black Bean Stuffed Tomatoes
- 4 whole Vine-ripened Tomatoes
- 1 whole Sweet Potato, Roasted
- 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
- 1/2 cups Feta Cheese, Crumbled
- 1 whole Lime, Zested
- 1 Tablespoon Chili Powder
- 1/2 Tablespoons Cumin
- 2 teaspoons Garlic Powder
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- Chili Oil, Salsa, And Lime Juice, To Serve
- Cut the tops off the tomatoes and carefully scoop out the flesh inside with a spoon.
- Season with salt and pepper and set aside.
- Mix potatoes, beans, feta, lime zest, and spices together thoroughly and heat through.
- (Feel free to add flesh from tomatoes in mixturemy family prefers it out so I leave out.)
- Stuff in hollowed out tomatoes and top with additional feta if desired.
- Serve with chili oil, salsa, and lime juice.
