Rum Lime Mousses
- 1 envelope unflavored gelatin
- 1/4 c. light rum
- 1/3 c. fresh lime juice
- 1 Tbsp. lime zest
- 3 large eggs, separated
- 1/2 c. sugar
- 3/4 c. heavy cream
- 1 drop green food coloring, if desired
- In saucepan, sprinkle gelatin over the rum and let soften for 1 minute.
- Stir in lime juice, zest, yolks and 1/4 cup of the sugar.
- Cook mixture over low heat until thickened.
- Set pan in bowl of ice to cool, but do not let set.
- Beat egg whites with a pinch of salt until they hold soft peaks.
- Beat in remaining 1/4 cup sugar until whites hold stiff peaks.
- Pour 1/4 of white mixture into lime mixture.
- Fold in remaining whites gently.
- Beat cream until stiff peaks form.
- Fold into lime mixture with green food coloring.
- Chill.
- Spoon into dessert dishes.
