Rum Lime Mousses

  1. In saucepan, sprinkle gelatin over the rum and let soften for 1 minute.
  2. Stir in lime juice, zest, yolks and 1/4 cup of the sugar.
  3. Cook mixture over low heat until thickened.
  4. Set pan in bowl of ice to cool, but do not let set.
  5. Beat egg whites with a pinch of salt until they hold soft peaks.
  6. Beat in remaining 1/4 cup sugar until whites hold stiff peaks.
  7. Pour 1/4 of white mixture into lime mixture.
  8. Fold in remaining whites gently.
  9. Beat cream until stiff peaks form.
  10. Fold into lime mixture with green food coloring.
  11. Chill.
  12. Spoon into dessert dishes.
