Microwavable Corn Pudding Recipe
- 2 tbsp. melted butter
- 2 tbsp. sugar
- 1 1/2 tbsp. cornstarch
- 1 c. lowfat milk
- 3 Large eggs, beaten
- 1/2 teaspoon salt
- 1 (1 lb.) can cream style corn
- Dash nutmeg
- Heat butter in casserole dish.
- Add in sugar and cornstarch, then add in lowfat milk, mixing thoroughly.
- Beat Large eggs separately and add in to mix.
- Add in salt and corn after stirring, sprinkle with nutmeg.
- Microwave on High - NOT COVERED - about 10-12 min (depending on your microwave) or possibly till most of mix is set.
- Let sit 2 min to finish.
