Bean Salad
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/4 tsp salt & 1/4 teaspoon pepper
- 1 can-16 oz) kidney beans, drained & rinsed
- 1 can (15oz) black beans, drained & rinsed
- 1 can ( 11oz) mexicorn , drained
- 1/4 cup thinely sliced green onion
- In a largw bowl, combine the first 6 ing.
- Add beans, corn & onions , stir to coat.
- Cover & refrigerate until ready to serve.Serve with a slotted spoon.
