Homestyle Sweet And Sour Spareribs
- 1 (3 lb.) rack spareribs
- 3 Tbsp. sherry
- 1/3 c. cider vinegar
- 1/8-inch piece fresh ginger root, flattened
- 1 to 2 dried chili peppers, broken in half (optional)
- 1 can pineapple chunks
- 2 tsp. water
- 3 Tbsp. black soy sauce
- 1/4 c. brown sugar
- 2 cloves garlic, peeled and flattened
- 1/2 c. water or pineapple juice from fruit
- 2 tsp. cornstarch
- 1/2 tsp. sesame oil
- Trim excess fat from spareribs and cut into 2-inch lengths. Put a large, heavy frying pan or a wok over high heat.
- Sprinkle about a teaspoon of salt into it.
- When the pan is hot, add half the spareribs.
- The ribs will brown in their own fat.
- Stir the ribs around so they won't burn; they should be brown on all sides within 10 minutes.
