Pioneer Corn Bread Recipe

  1. Sift together dry ingredients.
  2. In a small bowl beat egg and add in lowfat milk and shortening to it.
  3. Add in egg mix to dry ingredients and stir just sufficient to moisten.
  4. Pour into greased 8 x 8 inch pan or possibly fill greased muffin c. 2/3 full.
  5. Bake at 400 degrees for 30 min (bread) or possibly for 20 to 25 min (muffins), or possibly till edges pull away from pan or possibly muffin c.. Makes 16 - 2 inch squares or possibly 12 muffins.
