Pioneer Corn Bread Recipe
- 1 c. flour
- 1 c. cornmeal
- 1 tbsp. sugar
- 3 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 egg
- 1 c. lowfat milk
- 1/4 c. melted shortening
- Sift together dry ingredients.
- In a small bowl beat egg and add in lowfat milk and shortening to it.
- Add in egg mix to dry ingredients and stir just sufficient to moisten.
- Pour into greased 8 x 8 inch pan or possibly fill greased muffin c. 2/3 full.
- Bake at 400 degrees for 30 min (bread) or possibly for 20 to 25 min (muffins), or possibly till edges pull away from pan or possibly muffin c.. Makes 16 - 2 inch squares or possibly 12 muffins.
