Divine Chicken
- 4 whole chicken breasts, pounded thin
- 3/4 c. fine dry Italian style bread crumbs
- 2/3 c. grated Parmesan cheese
- 4 Tbsp. minced parsley
- 1/4 tsp. pepper
- 1 c. melted butter
- 1 clove garlic, crushed
- 1 tsp. salt
- 6 Tbsp. lemon juice
- paprika to taste
- Combine bread crumbs, Parmesan cheese and parsley.
- In a separate dish, combine pepper, butter, garlic and salt.
- Dip chicken in butter mixture, then in crumb mixture.
- Roll into firm roll and skewer with toothpick.
- Arrange in a 12 x 8-inch casserole dish.
- Sprinkle with lemon juice.
- Drizzle remaining butter over chicken.
- Cover with wax paper.
- Microwave at Medium-high 12 to 15 minutes.
- Let stand 3 to 4 minutes.
- Sprinkle with paprika.
- This dish may be prepared ahead of time and reheated.
