Blueberry Cream Flan Recipe
- 1 1/2 c. all-purpose flour
- 1/2 c. sugar
- 1 1/2 tsp baking pwdr
- 1/3 c. margarine, soft
- 2 x egg whites
- 1 tsp vanilla
- 3 c. blueberries frzn, don't thaw Topping
- 2 Tbsp. all-purpose flour
- 2 c. plain lowfat yogurt
- 1 x egg lightly beaten
- 2/3 c. sugar
- 2 tsp lemon or possibly orange rind grated
- 1 tsp vanilla
- In food processor or possibly mixing bowl, combine flour, sugar, baking pwdr, margarine, egg whites and vanilla; mix well.
- Press into bottom of 10 inch square cake pan, springform or possibly flan pan, sprinkle with blueberries.
- Topping: In bowl, sprinkle flour over yogurt.
- Add in egg, sugar, rind and vanilla; mix till smooth.
- Pour over berries.
- Bake in 350/180 oven for 60-70 min or possibly till golden brown.
- Serve hot or possibly cool.
- Low Fat 5 points
- NOTES : Yummy!
- No one ever guesses which yogurt is the topping!
