Cashew Crusted Tilapia
- 4 pieces Tilapia, Boneless
- 1 stick Salted Butter, Melted
- Salt
- Pepper
- 1/4 cups Breadcrumbs
- 1/2 cups Cashews, Crushed
- Preheat your oven to 350 degrees.
- Cover a cookie sheet with aluminum foil (for easy clean-up later.)
- Evenly space Tilapia fillets on the sheet.
- Pour the melted butter over the fish, then add salt and pepper to taste.
- (You shouldnt need very much salt at all, between the cashews and the butter, its pretty well covered.)
- Sprinkle the breadcrumbs and crushed cashews over the fish fillets to create a nice, even crust.
- Bake at 350 degrees for 10 minutes, then switch your oven to the low broil setting for 2-3 minutes to finish the fillets off.
- The crust should be a dark golden brown and the fish should flake easily with a fork when it is done.
- Optionally, spoon the butter and cashews remaining in the pan over the fish.
- Serve with rice or steamed vegetables for a simple, light meal.
