Cashew Crusted Tilapia

  1. Preheat your oven to 350 degrees.
  2. Cover a cookie sheet with aluminum foil (for easy clean-up later.)
  3. Evenly space Tilapia fillets on the sheet.
  4. Pour the melted butter over the fish, then add salt and pepper to taste.
  5. (You shouldnt need very much salt at all, between the cashews and the butter, its pretty well covered.)
  6. Sprinkle the breadcrumbs and crushed cashews over the fish fillets to create a nice, even crust.
  7. Bake at 350 degrees for 10 minutes, then switch your oven to the low broil setting for 2-3 minutes to finish the fillets off.
  8. The crust should be a dark golden brown and the fish should flake easily with a fork when it is done.
  9. Optionally, spoon the butter and cashews remaining in the pan over the fish.
  10. Serve with rice or steamed vegetables for a simple, light meal.
