Albondigas
- 8 ounces ground pork
- 8 ounces ground beef
- 1 onion, finely chopped
- 1 cup breadcrumbs
- 1 teaspoon dried oregano
- 12 teaspoon cumin
- 12 teaspoon salt
- 12 teaspoon black pepper
- 1 egg, beaten
- oil (for frying)
- 1 chipotle chili, seeded
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 34 cup beef broth
- 14 ounces chopped tomatoes, juice reserved
- 7 tablespoons passata
- mix the meats,onion,bread crumbs,oregano,cumin,salt and pepper well.stir in the egg,mix well,roll into 1.5 inch balls,chill them while prepare the sauce.
- soak the dried chile in hot water for 15 min,drain the chile,reserve the soaking water.
- heat oil in a sauce pan and saute the onion for 3 min,add the chopped chile to onion,fry for 1 min,stir in the beef broth,tomatoes,passata and soaking water,season with salt,pepper,bring to a boil and lower the heat,simmer for 5 min,stir occasionally.
- heat the oil in a frying pan and fry the meatballs until browned,about 5 min,drain and transfer them to the sauce,simmer for 10 min.stir gently to coat the meatballs with sauce.
- serve with white rice.
