Gumdrop Fruitcake
- 1 c. butter, creamed
- 1 c. sugar
- 2 eggs, well beaten
- 4 c. flour
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
- 1 1/2 c. applesauce
- 1 tsp. baking soda
- 1 Tbsp. hot water
- 1 tsp. vanilla
- 1 c. raisins
- 1 c. nuts
- 1 lb. gumdrops
- Preheat oven to 325u0b0.
- Mix well the creamed butter, sugar and well beaten eggs.
- Sift together the flour, cinnamon, cloves, nutmeg and salt; reserve 1/4 cup for coating gumdrops.
- Add sifted mixture to first mixture alternately with the applesauce.
- Blend together the baking soda and hot water; add to mixture.
- Add the vanilla, raisins, nuts and gumdrops (which have been coated with the reserved dry mixture).
- Dough will be very stiff.
- Bake in a greased 10-inch tube pan at 350u0b0 for 1 hour and 40 minutes.
- Good to eat fresh or store in a tin.
