Christmas Cookie Gems
- 14 cup butter
- 14 cup shortening
- 34 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 23 cups all-purpose flour
- 12 teaspoon salt
- 14 teaspoon baking powder
- 14 teaspoon baking soda
- 12 cup sour cream
- 34 cup finely chopped walnuts or 34 cup pecans
- 13 cup seedless strawberry jam or 13 cup raspberry jam
- In a large bowl, cream the butter, shortening and sugar until light and fluffy.
- Beat in egg and vanilla.
- Combine the flour salt, baking powder, and baking soda; gradually add to creamed mixture alternatively with sour cream, beating after each addition on a low speed.
- Shape into 10 1 1/4 inch balls, roll in nuts.
- Place 2 in apart on greased baking sheets.
- Using the end of a wooden spoon handle, make a 3/8 to 1/2 in deep indentation in the center of each ball.
- FIll with jam.
- Bake at 350F for 10-12 minutes or until lightly browned.
- Remove to wire racks to cool.
