Tasty Brunch Wraps

  1. Whisk together the eggs, parsley and seasoning.
  2. Heat the oil in a large frying pan.
  3. Add egg mixture and cook over medium heat for 4-5 minutes, until egg is cooked.
  4. Allow to cool slightly then cut into quarters
  5. Spread the tortillas with mayonnaise, leaving a 2cm border.
  6. Top with rocket, a piece of omelette, some capsicum, snow pea sprout and a Single.
  7. Fold the bottom up toward the centre, then the sides inwards to enclose the filling.
  8. Serve.
