Fresh Corn Casserole
- 3 cups fresh yellow corn, cut from the cob
- 1 tablespoon flour
- 1/2 stick butter or margarine, melted
- 2 tablespoons brown sugar
- 1 teaspoon garlic salt
- 1 tablespoon chopped parsley
- 1 cup milk
- 2 eggs, beaten
- 1 small jar (2 ounces) pimentos, chopped
- Preheat oven to 350 degrees.
- In a bowl, mix the corn kernels with the flour.
- Add the remaining ingredients and mix well.
- Pour into a baking dish and bake for 1 hour.
