Foolproof! Sweet and Savory Shiitake and Deep Fried Tofu Stir-Fry
- 1/2 block Atsuage
- 2 to 3 Shiitake mushrooms
- 20 ml Mentsuyu
- 40 ml Water
- 1 dab Ginger (tubed is fine)
- 1 tsp Sugar
- 1 Ichimi chili pepper powder
- Cut the atsuage tofu and shiitake into bite-sized pieces.
- Briskly rinsing the atsuage in lukewarm water removes excess oil and gives a lighter taste.
- Combine mentsuyu, water, ginger, sugar, and ichimi powder in a bowl and mix evenly.
- There you have your sauce!
- In a heated frying pan, add the ingredients from Step 1, and stir-fry until browned.
- Once it has browned evenly, add the sauce from Step 2.
- Determine the concentration of the sauce to your liking by adjusting the simmering time.
- When it reaches your taste of preference, transfer to a dish and serve.
- To add color, I sprinkled white sesame seeds and julienned shiso leaves!
