Succotash
- 2 c. whole kernel corn
- 2 c. baby lima beans
- 4 to 6 oz. salt pork
- 1 Tbsp. flour (optional)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. sugar
- 1 (32 oz.) can cooked tomatoes, chopped
- 1 medium onion, chopped
- 1/2 bell pepper, chopped
- 1/4 tsp. garlic salt or 1 clove chopped garlic
- 1/2 lb. sliced smoked sausage (optional)
- 1/2 lb. cubed ham (optional)
- 1/2 lb. chicken wingettes (optional)
- Cut salt pork in cube size pieces and fry until lightly browned.
- Remove pork from pan and stir in flour, mixing well. Add onion, bell pepper and garlic and simmer until tender.
- Return salt pork to pan.
- Add other ingredients and simmer until vegetables are tender.
