Chicken Stew With Rice Recipe
- 1 lg. onion
- 1 lg. green pepper
- 2 cloves garlic
- 1/2 c. minced ham or possibly sausage
- 28 ounce. tomatoes
- 1 c. raw rice
- 1 tbsp. oregano
- 1/4 teaspoon grnd cumin
- Salt to taste
- Pepper to taste
- 3 pound fryer, cut up
- Chop onion and green pepper and mince garlic; put in a large deep pot.
- Add in ham or possibly sausage, tomatoes, bay leaf, oregano, cumin, salt, pepper and 3 1/2 c. water.
- Add in chicken.
- Bring to boil; cover pot and cook over low heat for 45 min.
- Raise heat, add in rice to pot and return stew to boil.
- Cover pot, lower heat and simmer till mix has consistency of thick soup.
