Turkey Leftover Stir-Fry
- 1/2 c. chicken broth
- 3 Tbsp. soy sauce
- 3 Tbsp. cider vinegar
- 2 tsp. cornstarch
- 1/4 tsp. crushed red pepper
- 1 Tbsp. oil
- 1 red or green bell pepper, cut into thin strips
- 4 scallions (each cut in half)
- 1 Tbsp. grated fresh ginger
- 1 clove garlic, minced
- 2 c. cooked turkey strips
- 3 c. cooked rice
- 1/4 c. peanuts, coarsely chopped
- 1 Tbsp. chopped cilantro or parsley
- Combine broth, soy sauce, vinegar, cornstarch and crushed red pepper.
- In skillet, heat oil over medium-high heat.
- Add pepper strips and scallions.
- Cook, stirring, 5 minutes.
- Stir in ginger and garlic.
- Cook 1 minute.
- Stir in chicken broth mixture. Reduce heat to medium.
- Add turkey.
- Bring to a simmer.
- Cook until slightly thickened, about 3 minutes.
- Serve over rice with peanuts and cilantro.
