Turkey Leftover Stir-Fry

  1. Combine broth, soy sauce, vinegar, cornstarch and crushed red pepper.
  2. In skillet, heat oil over medium-high heat.
  3. Add pepper strips and scallions.
  4. Cook, stirring, 5 minutes.
  5. Stir in ginger and garlic.
  6. Cook 1 minute.
  7. Stir in chicken broth mixture. Reduce heat to medium.
  8. Add turkey.
  9. Bring to a simmer.
  10. Cook until slightly thickened, about 3 minutes.
  11. Serve over rice with peanuts and cilantro.
