Pioneer Apple Pie(Diabetic)
- 2 (9-inch) pie crusts
- 2 cans apple slices (packed in water; do not drain)
- 1 1/2 c. apple juice
- 1/4 tsp. rum extract
- 1/4 c. cornstarch
- 1 1/2 tsp. apple pie spice
- 1/4 tsp. salt
- 1 c. Equal sweetener
- Bake 1 pie crust at 350u0b0 until golden brown.
- Heat apples with water (undrained), 1 cup apple juice and rum extract to a gentle simmer until apples are soft.
- In small bowl combine 1/2 cup apple juice, cornstarch, apple pie spices and salt.
- Mix well.
- Add slowly to simmering apples.
- Stir gently but completely.
- Cook for 1 minute after mixture starts to boil.
- Remove from heat.
- Stir 1 cup Equal into mixture.
- Cool and pour into cooled pie shell. Place uncooked pie shell on top of filled shell. Seal and crimp around edges.
- Brush with water.
- Bake at 325u0b0 until golden brown.
