Pioneer Apple Pie(Diabetic)

  1. Bake 1 pie crust at 350u0b0 until golden brown.
  2. Heat apples with water (undrained), 1 cup apple juice and rum extract to a gentle simmer until apples are soft.
  3. In small bowl combine 1/2 cup apple juice, cornstarch, apple pie spices and salt.
  4. Mix well.
  5. Add slowly to simmering apples.
  6. Stir gently but completely.
  7. Cook for 1 minute after mixture starts to boil.
  8. Remove from heat.
  9. Stir 1 cup Equal into mixture.
  10. Cool and pour into cooled pie shell. Place uncooked pie shell on top of filled shell. Seal and crimp around edges.
  11. Brush with water.
  12. Bake at 325u0b0 until golden brown.
