French Chocolate Mint Pie

  1. Combine cookie crumbs with butter and press into 8-inch pie plate or springform pan.
  2. Bake at 325 degrees for 10 minutes.
  3. Cool.
  4. Cream butter and sugar until mixture is light.
  5. Add chocolate and eggs and beat till fluffy.
  6. Mix in mint extract and fill cooled pie shell and chill overnight.
  7. Beat cream, sugar and vanilla until stiff peaks form.
  8. Pipe around edge, using a pastry bag.
  9. Sprinkle nuts over cream.
