Filipino Kare Kare

  1. Heat oil over medium high heat.
  2. Add onion and saute until translucent then add garlic and saute for 1 minute.
  3. Add beef and stir until all sides are brown.
  4. Gently scrape bottom of the pot to release any beef crispies that stuck to the bottom of the pot.
  5. Slowly add broth and water and bring to a boil, uncovered.
  6. Lower heat to medium low, cover and simmer for 30 minutes.
  7. Then add peanut butter and stir until there are no more lumps.
  8. Add beans, cover and continue to simmer for 10 minutes.
  9. Stir occasionally to prevent peanut butter from sticking and burning on the bottom of pan.
  10. After 10 minutes, add bok choy, return the cover and let it simmer for 5 minutes.
  11. Taste and add salt if necessary.
  12. Serve with rice and optional shrimp paste.
