Filipino Kare Kare
- 2 Tablespoons Vegetable Oil
- 1 whole Onion, Diced
- 2 cloves Garlic, Peeled And Minced
- 2 pounds Beef Stew Meat (chunked)
- 2 cups Low Sodium Beef Broth
- 3 cups Water
- 1 jar Creamy Peanut Butter (16 Ounce Jar)
- 2 cups Cut Green Or Long Beans (more If You Want)
- 2 cups Bok Choy (more If You Want)
- 1 pinch OPTIONAL Salt
- 1 Tablespoon Optional Shrimp Paste
- Heat oil over medium high heat.
- Add onion and saute until translucent then add garlic and saute for 1 minute.
- Add beef and stir until all sides are brown.
- Gently scrape bottom of the pot to release any beef crispies that stuck to the bottom of the pot.
- Slowly add broth and water and bring to a boil, uncovered.
- Lower heat to medium low, cover and simmer for 30 minutes.
- Then add peanut butter and stir until there are no more lumps.
- Add beans, cover and continue to simmer for 10 minutes.
- Stir occasionally to prevent peanut butter from sticking and burning on the bottom of pan.
- After 10 minutes, add bok choy, return the cover and let it simmer for 5 minutes.
- Taste and add salt if necessary.
- Serve with rice and optional shrimp paste.
