Vegetarian Chef's Salad
- 8 cups chopped romaine lettuce
- 4 medium tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 2 cups alfalfa sprouts
- 1 carrot, chopped
- 2 medium red peppers, chopped
- 2 cups frozen peas and carrots, thawed
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- 2 hard-boiled eggs, sliced
- 1/2 cup
- 4 medium apples, cored and quartered
- 1/4 cup peanut butter
- 32 fl oz (4 cups) drinking water
- Add the following to each of 4 large bowls: 2 cups lettuce, 1/4 of the tomato, 1/2 cup alfalfa sprouts, 1/4 of the carrot, 1/4 of the pepper, 1/2 cup peas and carrots, 1/4 cup cheese, and 1/4 of the egg; top each salad with 2 Tbsp.
- dressing.
- Complement each salad with a sliced apple topped with 1 Tbsp.
- peanut butter for dessert.
- Serve each person an 8 fl oz glass of water with meal.
