Healthy Whole-Grain Muffins
- 1 c. unbleached white flour
- 2 c. whole wheat flour
- 3 tsp. cinnamon
- 4 tsp. baking soda
- 1/2 tsp. salt
- 3 well-ripened bananas
- 3/4 c. diet margarine
- 1 c. water
- 1 1/2 c. raisins
- 1/4 c. buttermilk
- 1 c. chopped walnuts
- 1 1/2 c. brown sugar
- 3 eggs
- 3 1/2 c. rolled oats
- 1/2 c. wheat germ
- 1/2 c. chocolate chips
- In mixing bowl, combine flours, cinnamon, baking soda and salt; set aside.
- Blend bananas in a blender or food processor. Add margarine and continue to blend.
- Combine water and raisins in a microwave-safe container and heat for 1 1/2 minutes on High. Add raisin mixture, buttermilk and walnuts to bananas and process on High until well blended.
- Pour into a large mixing bowl and add brown sugar and eggs.
- Mix until combined.
- Add dry ingredients, oats, wheat germ and chocolate chips and mix until combined.
- Fill muffin tins 3/4 full and bake for 15 to 20 minutes at 350u0b0.
- Makes 36 muffins.
