Healthy Whole-Grain Muffins

  1. In mixing bowl, combine flours, cinnamon, baking soda and salt; set aside.
  2. Blend bananas in a blender or food processor. Add margarine and continue to blend.
  3. Combine water and raisins in a microwave-safe container and heat for 1 1/2 minutes on High. Add raisin mixture, buttermilk and walnuts to bananas and process on High until well blended.
  4. Pour into a large mixing bowl and add brown sugar and eggs.
  5. Mix until combined.
  6. Add dry ingredients, oats, wheat germ and chocolate chips and mix until combined.
  7. Fill muffin tins 3/4 full and bake for 15 to 20 minutes at 350u0b0.
  8. Makes 36 muffins.
