Spicy Mango Salsa

  1. Combine all ingredients except pectin in large saucepan.
  2. Bring to full rolling boil on high heat; cook 1 min., stirring constantly.
  3. Remove from heat.
  4. Stir 5 min., skimming foam as necessary.
  5. Pour into clean plastic containers; cover with tight-fitting lids.
  6. Let stand at room temperature until set.
  7. (This may take up to 24 hours.)
