Creamy Pesto Pasta Salad
- 300 g orrechiette pasta, cooked, drained and cooled
- red onion
- Kalamata olives
- KRAFT Basil and Herb Pasta Salad Dressing
- rocket leaves
- 600 g orange sweet potato, peeled and cut into 2cm cubes
- Olive oil spray
- PLACE the sweet potato on a paper lined baking tray, spray with oil and bake at 180oC for 20-25 minutes or until tender.
- Allow to cool slightly.
- COMBINE the pasta with the sweet potato, red onion and olives in a serving bowl.
- Drizzle with the dressing and toss through.
- Top with rocket leaves.
- Serve immediately.
- HANDY TIP: Sweet Potato is also known as kumera.
- It can be used in place of regular potato and baked.
- It's delicious added to soups, pies and curries.
