Simple Watercress Sandwich
- 2 slices bread
- 2 tablespoons cream-style cottage cheese (vegans can use mashed avocado, its delicious too)
- 4 slices tomatoes (sliced thin)
- salt
- pepper
- watercress (washed dried and destalked)
- Spread cheese or avocado on both slices of bread.
- Layer one slice with tomato, season with salt and pepper.
- Top with watercress.
- Close with the other slice.
- Cut and Serve!
