Stuffed Zucchini Blossoms

  2. Heat the oil in a heavy skillet until hot.
  3. It should be at a depth of about half an inch.
  4. Use more or less oil as needed.

  6. Wash and dry the blossoms.
  7. Place one cube of mozzarella into the base of each blossom, then twist the petals of the flower closed.

  9. Mix the breadcrumbs and parmesan cheese.
  10. 4.
  11. Dip each blossom into the beaten egg, letting the excess run off.
  12. 5.
  13. Roll each blossom in the breadcrumb mixture until thoroughly coated.
  14. 6.
  15. Fry in the hot oil until brown and crispy, turning once.
  16. These are excellent served with marinara sauce!
