Hibiscus-Glazed Turkey

  1. Heat oven to 325 degrees F.
  2. Remove discard neck and giblets from turkey cavities.
  3. Rinse turkey; drain well.
  4. Free legs from tucked position, but do not cut the band of skin.
  5. Use rubber spatula or your hand to loosen skin over breast, starting at body cavity opening by legs.
  6. Place turkey, breast side up, on rack in roasting pan.
  7. Place chiles and bacon between turkey flesh and skin.
  8. Cover breast loosely with foil to prevent over-browning.
  9. Bake 2-1/2 hours.
  10. Meanwhile, bring water to boil in saucepan.
  11. Add flowers; stir.
  12. Return to boil.
  13. Simmer on medium-low heat 8 min.
  14. or until liquid is reduced to 1-1/3 cups.
  15. Strain liquid; set aside.
  16. Heat dressing in small saucepan on medium heat.
  17. Add onions and garlic; cook and stir 3 min.
  18. Add strained hibiscus liquid and marmalade; stir.
  19. Cook 15 min., stirring occasionally.
  20. Cool.
  21. Brush turkey with 1/2 cup marmalade glaze.
  22. Bake, uncovered, 30 min.
  23. or until turkey is done (165F), brushing occasionally with remaining glaze.
  24. Let turkey stand 15 min.
  25. at room temperature before carving.
