Green Pepper Steak
- 1 lb. beef chuck or round
- 1/4 c. soy sauce
- 1 clove garlic
- 1 1/2 tsp. grated fresh ginger
- 1/4 c. oil
- 1 c. green onion, thinly sliced
- 1 c. red or green peppers, cut into 1 inch squares
- 2 stalks of celery
- 1 Tbsp. cornstarch
- 1 c. of water
- 2 tomatoes, cut into wedges
- Cut beef across grain into thin strips.
- Combine soy sauce, garlic, ginger and add beef.
- Toss and set aside while preparing vegetables.
- Heat oil in large frying pan on wok.
- Add beef, brown well on high heat.
- If meat is not tender cover and simmer for 30 to 40 minutes on low heat.
- Add vegetables and cook on high about 10 minutes or until tender crisp.
- Mix cornstarch with water, add to pan and cook until thickened.
- Add tomatoes and heat through.
