Eggy Crumpets With Bacon

• 6 slices bacon
• 1 knob butter
• 1 large egg plus 1 large egg yolk
• 2 round crumpets, halved
• HP steak sauce, to serve

1. Fry bacon till crispy, move to one side of pan.
2. Add butter to pan.
3. Beat egg and yolk together and add seasoning to taste.
4. Dip crumpet into this mixture.
5. Fry crumpet in butter in pan on both sides till golden.
6. Serve with bacon and sauce.
