Savory Salmon Luncheon Pie
- 1 (unbaked) 10-inch pastry shell
- 1 lb. can salmon
- 1 Tbsp. lemon juice
- 1 medium onion, chopped
- 1 Tbsp. parsley flakes
- 2 Tbsp. butter
- 6 eggs, lightly beaten
- 1 1/2 c. milk
- 3/4 tsp. celery salt
- 1/4 tsp. basil leaves
- 1/4 tsp. dry mustard
- 1/4 c. sliced stuffed olives
- 1/4 tsp. white or black pepper
- Prick pastry shell with tines of a fork; bake in a 450u0b0 oven for 5 minutes. Drain salmon, reserving liquid; remove bones and skin.
- Flake salmon and place in bottom of pastry shell; sprinkle with lemon juice.
- Saute onions and parsley flakes in butter; sprinkle over salmon.
- Mix liquid from salmon with eggs, milk and remaining ingredients; pour over salmon.
- Bake in 350u0b0 oven for 50 minutes, or until firm.
- Serve hot.
- Serves 6.
