BBQ Shrimp Tacos with Honey Mustard Apple Slaw
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Honey
- 1 Tablespoon Brown Mustard
- 1 Tablespoon Mayonnaise
- 1 whole Apple, Cut Into Matchsticks
- 2 cups Shredded Green Cabbage
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Ketchup
- 1 Tablespoon Worcestershire Sauce
- 1 teaspoon Chili Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- Olive Oil, As Needed
- 1 pound Shrimp, Peeled And Deveined
- Small Flour Or Corn Tortillas
- 1/2 cups Queso Blanco Or Cotija Cheese, Crumbled
- Sliced Green Onions, Cilantro Leaves, And Lime Wedges, For Serving (optional)
- For the slaw: Combine vinegar, honey, mustard, and mayonnaise in the bottom of a bowl until creamy.
- Add the apple and cabbage and toss to coat.
- Taste, and adjust the seasonings of the dressing to your preference.
- For the BBQ sauce: Combine all ingredients in a bowl, stirring vigorously to combine.
- Taste, and adjust seasonings to your preference.
- For the tacos: Heat a large skillet to medium-high heat with a drizzle of olive oil.
- When pan is hot, add shrimp in one even layer.
- After 2 minutes, flip shrimp and pour BBQ sauce into the skillet.
- Let the shrimp finish cooking for 2 minutes until cooked through and sauce has reduced.
- Layer taco shells with slaw, shrimp, cheese, and any toppings youd like.
