BBQ Shrimp Tacos with Honey Mustard Apple Slaw

  1. For the slaw: Combine vinegar, honey, mustard, and mayonnaise in the bottom of a bowl until creamy.
  2. Add the apple and cabbage and toss to coat.
  3. Taste, and adjust the seasonings of the dressing to your preference.
  4. For the BBQ sauce: Combine all ingredients in a bowl, stirring vigorously to combine.
  5. Taste, and adjust seasonings to your preference.
  6. For the tacos: Heat a large skillet to medium-high heat with a drizzle of olive oil.
  7. When pan is hot, add shrimp in one even layer.
  8. After 2 minutes, flip shrimp and pour BBQ sauce into the skillet.
  9. Let the shrimp finish cooking for 2 minutes until cooked through and sauce has reduced.
  10. Layer taco shells with slaw, shrimp, cheese, and any toppings youd like.
  11. Enjoy!
