Date Swirl Cookies
- 1 1/4 c. dates
- 1/8 tsp. salt
- 1/2 c. sugar
- 1/2 c. water
- 1 Tbsp. lemon juice
- 3/4 c. nut meats, cut fine
- 1 c. butter
- 1/2 tsp. salt
- 2 eggs, unbeaten
- 1 1/2 tsp. soda
- 2 c. brown sugar, packed
- 3 1/2 c. sifted flour
- 1 tsp. vanilla
- Cook dates, salt, sugar and water until thick.
- Remove from fire, add lemon juice and nuts, cool.
- Cream butter and sugar. Add eggs and beat thoroughly.
- Add flour sifted with soda.
- Chill in refrigerator for half hour.
- Divide in three parts, roll each part into a rectangle about 1/4 inch thick.
- Spread thin layer of cooled date mixture on dough.
- Roll like a jelly roll.
- Wrap in wax paper.
- Chill or freeze overnight or until firm enough to slice.
- Bake in oven at 350u0b0.
- Makes 150 cookies.
