Date Swirl Cookies

  1. Cook dates, salt, sugar and water until thick.
  2. Remove from fire, add lemon juice and nuts, cool.
  3. Cream butter and sugar. Add eggs and beat thoroughly.
  4. Add flour sifted with soda.
  5. Chill in refrigerator for half hour.
  6. Divide in three parts, roll each part into a rectangle about 1/4 inch thick.
  7. Spread thin layer of cooled date mixture on dough.
  8. Roll like a jelly roll.
  9. Wrap in wax paper.
  10. Chill or freeze overnight or until firm enough to slice.
  11. Bake in oven at 350u0b0.
  12. Makes 150 cookies.
