White Chocolate Holiday Cookies
- 12 cup butter, softened
- 12 cup shortening
- 34 cup packed brown sugar
- 12 cup sugar
- 1 egg
- 12 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 14 teaspoon salt
- 14 teaspoon ground cinnamon
- 14 teaspoon ground ginger
- 6 (1 ounce) white chocolate baking squares, coarsely chopped
- 1 12 cups chopped pecans

- In a large bowl, cream the butter, shortening and sugars until light and fluffy.
- Beat in egg and extract.
- Combine the dry ingredients; gradually add to creamed mixture and mix well.
- Stir in the white chocolate and pecans.

- Drop by the rounded teaspoonfuls 2 inches apart onto greased baking sheets.
- Bake at 350 degrees for 8-10 minutes or until lightly browned.
- Remove to wire racks to cool.
