Easy Fruitcake
- 3 cups chopped peeled apples
- 2 cups sugar
- 12 cup apple juice
- 3 eggs
- 34 cup vegetable oil
- 1 12 teaspoons vanilla
- 3 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chopped pecans
- 8 ounces candied red cherries, chopped
- 8 ounces green glazed cherries, chopped
- 8 ounces candied pineapple, chopped
- In lg bowl, mix apples, sugar and apple juice.
- Let stand 10 minutes.
- In sm bowl, mix eggs, oil, and vanilla.
- Add to apples; mix well.
- Combine flour, cinnamon, allspice, baking soda and salt.
- Add to apples; mix well.
- Fold in pecans, and fruit.
- Line 3 loaf pans with waxed paper; grease the paper.
- Pour batter into pans.
- Bake at 350* for 1 hour, or until cakes test done.
- Cool in pans for 10 minutes; turn out and cool on wire racks.
