Cherry Pepsi Pulled Pork
- 1 bone-in pork shoulder
- 2 liter cherry pepsi
- 2/3 cup malt vinegar
- 1/2 cup brown sugar
- 1 tbsp crushed pepper flakes
- 1 vegetable oil; as needed
- 1 cup flour
- 1 large pinch kosher salt and black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- In a large sauce pot, heat enough vegetable oil to cover the bottom.
- Season flour.
- Dredge pork shoulder and shake off excess flour.
- Sear pork shoulder on each side.
- Remove from pot.
- Add 1/2 cup pepsi and malt vinegar.
- Scrape up the brown bits (fond) as the liquid reduces.
- Add remaining pepsi when all the fond is lifted.
- Cover.
- Simmer for approximately 3 hours or until pork easily releases from bone.
