Honey-Gingered Pork Tenderloin
- 2 3/4 lb. pork tenderloin
- 1/4 c. soy sauce
- 2 Tbsp. brown sugar
- 1 Tbsp. plus 1 tsp. minced fresh ginger root
- 1 Tbsp. minced garlic
- 1/4 tsp. onion powder
- 1/4 tsp. ground red pepper
- 1/4 tsp. ground cinnamon
- 1/4 c. honey
- 1/4 c. oyster sauce
- 1 Tbsp. catsup
- fresh parsley sprigs (optional)
- Place tenderloins in an 11 x 7 x 1 1/2-inch baking dish. Combine honey and next 9 ingredients, stirring well.
- Pour over tenderloins.
- Cover and marinate in refrigerator 8 hours, turning occasionally.
- Remove tenderloins from marinade, reserving marinade.
- Grill tenderloins over medium hot coals 25 to 35 minutes, turning often and basting with reserved marinade.
- Pork is done when meat thermometer inserted into thickest portion of meat.
- Slice tenderloins.
- Serve on a platter, garnish with parsley.
- Yields 6 servings.
