Holiday Eggnog Bread
- 2 large eggs
- 1 cup eggnog
- 1/2 cup margarine melted
- 2 teaspoons rum extract
- 1 teaspoon vanilla extract
- 2 1/4 cups flour, all-purpose
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg ground
- 1/2 cup pecans chopped
- 1/2 cup candied cherries red and green, chopped
- Preheat oven to 350F (180C).
- Grease a 9x5-inch loaf pan.
- In a large bowl, beat eggs.
- Add sugar, eggnog, margarine, rum extract, and vanilla extract.
- Blend well.
- Stir in flour baking powder, salt, nutmeg, pecans, and red and green candied cherries.
- Mix just until blended.
- Pour into prepared loaf pan.
- Bake for 45 to 50 minutes.
